As Rob said, there is a chart of the F key
functions which can be printed out, help > print F key chart
It's not an overlay, but it is the same size as a standard Windows keyboard, so can be folded and placed behind it.

The only video with music is the very old starter track plan
video, so I assume you mean that one. It is very overdue to be replaced with a new one. But for an explanation of what is happening in it, see this page on basic Templot methods:
All the later videos do not have music, because they contain interactive pauses, with explanatory notes to read.

All the above having been said, I'm afraid the docs for Templot are currently in an utter mess, having been built up over 20+ years as the program was first released and then developed and changed. I have promised many times over the years to sort it all out. But it has become too daunting a task, and nowadays I prefer to go for a walk with my camera. There is a reason why Templot is now free.
